The Origins of Quesabirria
Quesabirria tacos come from birria, a centuries-old celebratory stew from the state of Jalisco, Mexico. Traditionally made with goat and seasoned with a blend of dried chiles and spices, birria was slow-cooked until tender and enjoyed at weddings, holidays, and family gatherings. In the 1950s, the dish migrated north to Tijuana, where taqueros adapted the recipe using beef, serving it with a flavorful broth called consomé.
The Quesabirria Twist
By the early 2010s, Tijuana street vendors gave birria a bold new life. They layered melted cheese with the juicy beef, folded it into tortillas dipped in the rich chile sauce, and crisped them on the griddle. Served with a side of consomé for dipping, this new “quesabirria” became an irresistible mix of crunch, cheese, and savory flavor.
A Global Food Trend
Social media quickly spread the craze, turning quesabirria into one of the most famous modern Mexican street foods. From Los Angeles to Kansas City and beyond, these tacos are now a worldwide sensation, loved for their tender meat, gooey cheese, and signature dipping broth.
