The Origins of Quesabirria
Quesabirria tacos come from birria, a centuries-old celebratory stew from the state of Jalisco, Mexico. Traditionally made with goat and seasoned with a blend of dried chiles and spices, birria was slow-cooked until tender and enjoyed at weddings, holidays, and family gatherings. In the 1950s, the dish migrated north to Tijuana, where taqueros adapted the recipe using beef, serving it with a flavorful broth called consomé.
